Pepperoni
Born in America, Pepperoni pizza is one of the most loved pizza worldwide. In Italy we call it Diavola and it is topped with spicy salame (which is called salamino piccante). Plus the Calabrian version well renowned for its brother ingredient, the Nduja.
Salsiccia and Friarielli
Salsiccia and friarielli… in Naples it almost seems like a single word.
You can try playing with combinations as much as you want, but the perfect matching that friarielli has with sausage is truly inseparable!
Olives
The best olives to use on pizza are the black pitted. We supply the Spanish, the Greek and the Sicilian ones marinated with an old recipe, both pitted and not.
Anchovies
This is the simplest of all toppings. The key is to use a great anchovy, like Scalia fished in from the Sicilian Sea. Packed in salt or filleted in oil, add them to the top of the pizza after it comes out of the oven. This allows them to melt a little and become aromatic.
Nduja
Nduja is a spreadable salami from Calabria in southern Italy. It is a very delicious and versatile speciality ingredient, with a soft, spreadable consistency, perfect to dab over a pizza. Its popularity in UK started in 2006 when Chef Mazzei, from Calabria, first introduced the ‘nduja giving his home speciality the recognition it deserved.
