The most awarded method to create a natural cooked ham is not by pressing it in the cast moulds. Leoncini have perfected a method to prepare this artisan Prosciutto Cotto in the most natural way using a string, so they are not all the same shape. From the best Italian farms in the Parma province, they select the most suitable pork legs. They undergo a process of artisanal trimming, deboned and hand tied by craftsmen. They are then cooked in a dry air oven, like the ancient traditional recipe. The result is a very soft texture, marbled Cotto ham, ready to be enjoyed on charcuterie boards or just filled in our Altamura Ciabatta, Panini and Focaccia breads.
